Cider Can Chicken
Ingredients
- 1 free-range chicken, as big as you think you can manage
- 1 can of cider
- A bunch of thyme
- 1 crushed clove of garlic
- Sea salt and freshly-ground black pepper
- Olive oil
Method
Rub the chicken all over with olive oil, then season generously inside and out.
Open the cider, pour a little into a roasting pan, then place the thyme and the garlic clove inside the can.
Place the can in the centre of the roasting pan and set the chicken down on top of it as far as possible — its claw joints should be touching, or almost touching, the metal.
Roast in an oven preheated to 190°C / gas mark 4 for two hours.
Remove the chicken to a serving dish, strain the contents of the cider can into the roasting pan and reduce by half over a moderate heat. Pour over the chicken and serve.
